Slow Cooker Chicken Chili for the Win!

If you want a quick and easy meal, then this is where you want to go. This is one of the easiest and most delicious recipes out there and it is all done in your crockpot! 

Skip long, drawn out cooking processes and just chuck some stuff in the slow cooker and go! Trust us, this recipe is going to hit home and be a favorite throughout the entire house. 

The recipe serves 8 and takes just 8 hours to warm up in the slow cooker!

Ingredients:

  • 14 ounces of drained petite diced tomatoes 
  • 8 ounces of tomato sauce 
  • 2 large skinless boneless chicken breasts
  • 1 cup chicken broth
  • 1/2 cup diced yellow onion
  • 1 diced green pepper
  • 14 ounces canned or frozen corn
  • 14 ounces drained and rinsed black beans
  • 1 minced jalapeno 
  • 1 teaspoon salt
  • 1 teaspoon oregano 
  • 2 teaspoon chili powder 
  • 1 tablespoons  ground cumin
  • 1 tablespoons  minced garlic
  • 4 ounces cream cheese

Add all of the ingredients to the crockpot except the cream cheese. Mix it up as best as you can. Cook on low for around 6 hours or so, or high on 3 hours. 

Remove the chicken and chop or pull into pieces, then return it to the slow cooker and stir everything up. Stir in the cream cheese and let it fully melt and mix in. Add salt and pepper to taste. Cover and cook for around 15 minutes. 

Serve warm and top with fresh cilantro, sour cream, shredded cheese or even crackers or cornbread. Enjoy!
