Life-Hacked Oatmeal Cookies

If you’re looking for a life changer, these oatmeal cookies are it. Grab and go is all you have to do after baking a few batches, plus they only take a half hour! 

If you want to have a bite of something delicious and not completely unhealthy for you, then try these quick go-to snacks. 

The recipe makes 3 1/2 dozen cookies and takes 30 minutes from start to finish! 

Ingredients:

  • 1.5 cup all purpose flour
  • 1 tablespoons baking soda
  • 1 tablespoons cinnamon
  • 1/4 tablespoons salt 
  • 2 sticks or 1 cup softened unsalted butter
  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 1 large room temperature egg
  • 1.5 tablespoons vanilla extract
  • 1.5 cup rolled oats but not the quick-cook kind
  • 1 cup sweetened shredded coconut

Preheat your oven to 375 degrees. Combine the flour, baking soda, salt, and cinnamon in a small bowl and set it aside. 

Use a large bowl to cream together the butter and both sugars until they’re smooth. Add in the vanilla and egg and then beat well. Add in the small bowl of dry ingredients and mix them together thoroughly, then the coconut and oats. 

Drop in teaspoonfuls onto the ungreased cookie sheet. There should be several inches between each one. Bake for around 12-14 minutes or until they’re lightly golden. 

Cool on the sheets for 5 minutes and then a wire rack to cool completely.
