Gingerbread Cookies for the Holidays

If you want a special recipe to share with those close to you, this recipe is the perfect one for just that. 

Enjoy the benefits of having delicious cookies warm from the oven with little gingerbread smiles on them. 

In 40 minutes you can make around 3 dozen cookies.

Ingredients:

  • 1/2 teaspoon of salt (3g)
  • 1/3 cup of dark brown sugar (75g)
  • 1 teaspoon cinnamon (3g)
  • 2 1/2 cups of flour (315g)
  • 2 teaspoon ginger (4g)
  • 1/4 teaspoon cloves
  • 1/2 teaspoon nutmeg (2g)
  • 1 teaspoon baking soda
  • 1/2 cup of room temperature butter
  • 1 egg
  • 1/3 cup of molasses (100g)

For the Icing 

  • 1 to 2 tablespoons for milk or lemon juice (15-30ml)
  • 1 cup of powdered sugar (120g)

Use a large bowl to whisk together the dry ingredients. Use another one for the wet ingredients. Mix together the dry mixture with the wet mixture slowly until they’re both well combined into dough. 

Divide the dough into two balls and cover each with plastic wrap. Place in the fridge for an hour or more. 

Preheat the oven to 350 degrees and line two baking sheets with parchment paper. 

Roll the dough between two layers of plastic wrap until they’re around 2-3 mm thick. Thicker dough provides softer cookies, thinner is crunchier. 

Cut the dough out using cookie cutters and roll out the remaining dough to create more. Place the cookies on the sheets with small space in between each of them. 

Bake the cookies for 7 to 10 minutes total. Cook on the baking sheet for a couple of minutes then on a wire rack. 

To make the icing for decorating, combine the sugar and milk or juice and then pour into a piping bag and decorate.
