Double Chocolatey Chip Scones

If you’re looking for a little something to dive right into, then these scones have exactly what it is that you're looking for. 

Indulge in your sweet tooth and make sure to hide them away, they’re too good to be shared! 

This recipe makes 8 servings and takes a little over a half hour.

Ingredients:

  • 1/2 cup unsweetened cocoa powder (60g)
  • 1/2 cup sugar (100g)
  • 1 3/4 cups all purpose baking flour (220g)
  • 2 1/2 teaspoons of baking powder (10g)
  • 1/2 teaspoon of salt (2g)
  • 1/2 teaspoon of instant coffee (1g)
  • 1 egg
  • 6 tablespoons of cold butter cut up into cubes
  • 4 ounces of semisweet chocolate chips (120g)
  • 3/4 cup of buttermilk (180g)
  • 1 egg (topping)
  • chocolate chips (topping)

Preheat your oven to 400 degrees and line a baking sheet with parchment paper to prevent sticking. 

Using a large bowl and a whisk, put together the sugar, flour, coffee, cocoa, salt and baking powder. Add in the butter cubes and use a fork to break down the pieces to smaller than pea sized. 

Add in the chocolate and toss until it is completely covered in the mixture. 

Combine the egg with the buttermilk and then pour over the dry mix and combine. Shape the dough on a floured surface and cut into 8 triangles after flattening it out into a circle. 

Place the triangles on a baking sheet and then brush the tops with egg. Top with chocolate chips. 

Bake them for no more than 20 minutes or until they’re cooked completely through. Add to the cooling rack and serve them warm.
