Breakfast Cookies - Oatmeal Chocolate Banana

If you’re looking for a little sugar in the morning, but the filling that keeps you going until lunch time, these cookies provide it. 

Try the recipe for yourself and see just how delicious it really is! 

The recipe makes 32 cookies and takes 45 minutes to make. 

Ingredients:

  • 1 cup of nuts (300g) - can be pecans, walnuts, almonds, etc.
  • 2 1/2 cups of rolled oats (300g)
  • 2 tablespoons of sunflower seeds (20g)
  • 2 tablespoons of flax seeds (20g)
  • 1/4 cup of shredded coconut (20g)
  • 1 egg
  • 1 banana
  • 1 teaspoon of cinnamon (2g)
  • 1 lemon for the zest
  • 1/2 teaspoon of salt (1g)
  • 1/2 cup of raisins (70g)
  • 2/3 cup of plain yogurt (160g)
  • 1/4 cup of brown sugar (50g)
  • 3 tablespoons of coconut oil (45ml)
  • 4 ounces of chopped bittersweet chocolate (120g)

Preheat your oven to 350 degrees and line two baking sheets with parchment paper to prevent sticking. 

Combine all of the dry ingredients in a large mixing bowl.

In a small bowl mix together the banana, egg, coconut oil and yogurt. 

Add the wet mixture over the dry mixture and mix until completely combined. 

Scoop in spoonfuls onto the parchment paper on the cookie sheets. Flatten the tops to your desired thickness, as these will not flatten when they’re baked. Bake the cookies for 15-20 minutes and then let cool before serving.
